The carrot halwa is tasty sweet and traditional recipe. It is liked by people of all ages especially children. Carrot halwa is specially prepared during the carrot season. The ingredients and method to prepare carrot halwa as under.
Ingredients Quantity
Carrots 1 kg
Milk 1 kg
Sugar one and half cup or as per desire
Small cardamom Eight to ten grains
Ghee three-quarters cup
Shredded nuts One cup
Almonds and pistachios. As required (for garnishing)
Method to prepare:
(a). Peel and grate the carrots.
(b). Heat the ghee in a pan and grind the small cardamom seeds. When the aroma starts coming out, add the grated carrots and cook for five minutes.
(c). Add hot milk to it, mix it and keep stirring it continuously.
(d). When the milk is cooked, add sugar and mix it and keep stirring it, cook it until the sugar water dries up and the carrots are fried.
(f). Finally, add one cup of khoya and two tablespoons of finely chopped almonds and pistachios.
(g). Keep it on the stove for ten minutes and remove it later.
The delicious carrot halwa is ready. Take it out in a dish and decorate it with almonds, pistachios and silver foil and serve.
